Chocolate Fudge Cupcakes

It's been a while since I shared a baking post, but in March I did a lot of baking and some were recipes I'd tried never tried before. So I thought I'd share them with you, starting with these Chocolate Fudge Cupcakes from Jane's Patisserie.

Let's get baking!

Ingredients:
Cupcakes:
100g dark chocolate
100g unsalted butter
1 tsp instant coffee
75ml boiling water
100g plain flour
20g cocoa powder
1 tsp baking powder
200g light brown sugar
2 medium eggs
75ml buttermilk
1/2 tsp vanilla

Buttercream Frosting:
150g unsalted butter (room temp, not Stork/spread)
300g icing sugar
35g cocoa powder
1/2 tsp vanilla
75-100ml evaporated milk

Start off by pre-heating your oven to 160C/140C Fan and get you cupcake case ready.

In a bain-marie add your chocolate and butter, heat and mix until melted.

While that's melting, pour the boiling water onto the coffee granules and mix until smooth.

Add the coffee into the chocolate/butter mixture and mix until smooth.

In a large bowl add the flour, cocoa powder, baking powder and sugar, and whisk until distributed.

In a jug or bowl, mix together the buttermilk, eggs and vanilla.

Now it's time to add the 3 mixtures together - pour the chocolate/coffee mix and the egg mixture into the dry ingredients. Fold until smooth.

Split the mixture evenly between your baking cases, I use an ice cream scoop to fill my cases and filled them 2/3.

Bake in the oven for 28-32 minutes. Leave to cool fully once baked.

Make sure you butter is room temperature before beginning the buttercream frosting.

In a bowl, beat the butter on it's own for a few minutes to soften.

Add in the icing sugar and cocoa powder 1/2 at a time, and beat until combined.

Add in the vanilla, and then the evaporated milk a little at a time beating in fully each time. I use 100ml for the consistency I prefer.

Pipe the buttercream frosting onto your cupcakes and decorate if you wish to.




This recipe is really easy to follow. I originally made these cupcakes for mothers day as a gift for my mum and with the size cases I used, got 11 cupcakes out of the mixture. I've made this recipe a few more times since and used fairy cases and got a lot more out of the mixture.
These cupcakes are delicious and have become my go-to recipe when baking, I recently made some for a meeting at work and they went down a treat. They're really chocolatey and fudgy and very moreish.

Seventeenth Heaven is Seventeen's 11th mini album.

By the 12th of October 2023, Seventeenth Heaven had amassed 4.67 million stock pre-orders, surpassing their previous record of 4.64 million pre-orders with their previous album FML. It became the most pre-ordered releases in history, with 5.20 million pre-orders.

음악의신 (God of Music) won a total of 5 music show trophies, winning 1 on Show Champion, 1 on M Countdown, 1 on Music Bank, 1 on Show! Music Core and 1 on Inkigayo.

Woozi wrote the lyrics for 하품 (Yawn), with him also co-composing on the track.

US Sales = 98,000+
Giving the album a total of 6,223,468+ in sales.

The M/V for 음악의신 (God of Music) has so far gained 63,888,511 million views, with the views still rapidly increasing on a daily basis.

Seventeenth Heaven was released in 16 versions; 3 standard versions named AM 5:26, PM: 2:14 and PM 10:23, and 13 member Carat versions.
All versions are set out in a box case.
The standard versions come with the Cd, photo book, lyric book, festival wrist band *first press*, paper art kit, random sticker, random mini card, folded poster and 2 random photo cards.
The Carat versions are member based and come with the Cd, lyric book, random hardcover binder with photo card set and 4 random photo cards.
All photobooks are different.

I have the Carat version of the album and I got DK's version. I love the whole layout for this album and I especially love the concept, it's really cute and colourful.
The album itself is amazing, as expected from Seventeen, each track is different, and it takes me back to their debut release, while giving us new sounds.

I love the melody for SOS (Prod. Marshmello) and I knew I was going to love this track as soon as I heard it. I love how this track suits all their vocal tones, singing and rapping styles. It's a track that really compliments them all.

I love 음악의신 (God of Music), it's a really cute up tempo track that gives me Mansae and Very Nice vibes. Seventeen is one of those groups that can pull of cute and bright up tempo tracks, as well as dark vibes. This track never fails to get me singing along when I listen to it.

I have to say my favourite track from this album is Diamond Days, it really took me back to their debut with their b-side Shining Diamond, which is another of my favourite tracks. I will admit when I first heard it, it brought a few tears to my eyes because of how it made me reminisce, even though I wasn't a fan when they debuted, this year marks my 8th year of being a Carat.

What I love about this album is that we have team songs again, and it starts with Back 2 Back from the performance team. While I love this song, this is the first time the performance teams song hasn't been my favourite of the 3.

From the teaser, I knew I was going to love Monster, this track is by the hip-hop team and it's my favourite of the team songs. I love everything about this track and if any of the songs could sound less like Seventeen, it's this one. Which is why I love it so much because it's something new for us.

As expected of the vocal team, they pull off yet another mazing ballad with 하품 (Yawn). The melody is stunning, their vocals are stunning against the melody.

What better track to close the album with than Headliner. It's songs like Headliner that show that all 13 members are talented, even though they have their roles in the group, they can pull off other roles too.

As always Seventeen created an amazing album, with amazing and catchy tracks, you can really tell that they put their all into this album. This album really makes me reminisce, and I feel that's exactly what Seventeen wanted.

They're about to release a Best Of album, so I can't help but think this mini album was their last new release before the members start enlisting. I always look forward to Seventeen's releases as they never fail to blow me away and remind me just how amazing they are.
